Po Delta pink oysters have arrived at Poste Vecie

We are delighted to announce to all our guests that a true gem of our region has finally arrived on our menu: the exclusive Po Delta pink oysters.

Located in the Po Delta Regional Park, about 50 km from Albarella, you will find the Sacca di Scardovari—the largest lagoon in the Delta, situated within the municipality of Porto Tolle. This area is the ideal habitat for cultivating bivalve mollusks, such as clams and mussels, but it is best known for the production of the exclusive Po Delta pink oysters.

In fact, for a few years now, the unique Scardovari pink oysters have been cultivated here, produced using an innovative and eco-friendly method originating from France.

The Po Delta has proven to be the perfect location for applying this new cultivation technique to this prized mollusk, so much so that it has earned the title “Pearl of the Delta.”

Po Delta pink oysters: key characteristics

The Po Delta pink oyster is named for the distinctive pink striations on its shell, beautifully created by natural sunlight.

This oyster is characterized by its firm texture and velvety yet rich flavor, striking a perfect balance between salinity and smoothness.

As soon as you taste it, you will notice an immediate explosion of flavor, with an almost crunchy texture that gradually releases its freshness: first, the briny savoriness of the sea, followed by herbal aromas, and finishing with rich, nutty notes.
